Campfire Breakfast Scramble
(A hearty one pan breakfast for the first fire of the day.)
Essence:
Everything good about breakfast mixed in one pan, sizzling beside the fire. The eggs cling to sausage and potatoes while smoke gives it a taste no kitchen can copy.
Ingredients (Packable Version):
3 eggs (carried in a plastic egg case or replaced with powdered egg mix)
1 smoked sausage or bacon strip (shelf stable or vacuum sealed)
1 small potato, diced
¼ onion, chopped
1 tablespoon oil or bacon grease
Salt and pepper
Optional: a pinch of cheese powder or a spoon of salsa for heat
Gear Needed:
Cast iron skillet
Wooden spoon or stick for stirring
Small plate or lid
Prep at Home:
Dice the sausage and onion ahead of time. Store them in a sealed pouch. Pre mix powdered eggs with dry milk if you plan to travel light.
Cooking at Camp:
Heat the skillet near the coals and add oil or grease.
Fry the potatoes until golden brown.
Add sausage and onion. Cook until crisp around the edges.
Pour in the eggs and stir slowly, letting them catch and fluff.
Season with salt and pepper. Add cheese powder or salsa if desired.
